We all likely recall a good meal or favorite dessert as part of our life's milestone celebrations. Food has the unique ability to connect us with the people and events of our past, and Philippe is excited to bring his heritage and passion to Fort Collins.

Raised on his family's cognac vineyard in France, Philippe became an apprentice chef in his hometown of Cognac, France at the age of thirteen, realizing early on that he had a love for food and hospitality.

Once in the US, Philippe spent his formative years working with several renowned chefs: Thomas Keller of French Laundry, Patrick O'Connell of The Inn at Little Washington, Michel Richard of Citronelle, amongst others, who helped shape his style and gastronomic skills.

After years of honing his craft, Philippe's greatest dream became reality when he opened the restaurant alongside the people who matter most—his wife Rosi and sons William and Nico.

Together, this family has created a place where Philippe's passion for authentic French cuisine and the warmth of family hospitality come together at every table.

General Manager / Chef de Cuisine

Chef Jon's path to French cuisine started in an Indiana kitchen at sixteen, inspired by family and a love for feeding people. After working up from dishwasher to Kitchen Manager at Scotty's Brewhouse, eventually running an eight-million-dollar operation in Florida at twenty-one—Jon made his way to Fort Collins in 2019.

Meeting Philippe that first week in town changed everything. After leading kitchens at Stuft Burger Bar and Smokin' Fins, Jon joined Philippe's team in 2023, bringing years of experience and a deep respect for bistro cooking that's both honest and elevated.
 
Currently pursuing Certified Sommelier certification, Jon is committed to the craft that defines every chapter of this journey.
